2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons shortening
About 3/4 cup milk
Mix and sift the flour, baking powder and salt and work in the shortening with the finger tips or a pastry blender. Add milk to make a dough as soft as can be handled. The exact amount will depend on the capacity of the flour to absorb liquid. Turn the dough on to a floured board or cloth, pat it out and roll to three-fourths inch in thickness. Handle as little as possible. Cut with a floured biscuit cutter and place on a greased baking sheet. Bake in a hot oven until well browned. Time in baking, 15-20 minutes. Temperature, 450°. 8 to 12 biscuits.
Cheese Biscuits
Add one-half cup grated American cheese to the recipe for Baking Powder Biscuits, mixing it in after the flour and shortening have been blended.
Cinnamon Rolls
Make Baking Powder Biscuit dough and roll out in a thin rectangular sheet. Spread with softened butter and sprinkle with sugar (brown sugar is best) and cinnamon. Roll up like a jelly roll and cut off in inch slices. Place cut side down in a greased baking pan or in muffin pans and bake in a hot oven.
