1-1/2 cups steel-cut oatmeal
1 teaspoon salt
1 teaspoon sugar
1 teaspoon baking powder
1 tablespoon butter
1/2 cup warm water
Mix dry ingredients, melt butter in warm water and add to the mixture. Oats must be freshly cut or a bitter taste will make the cakes disagreeable. Knead dough until firm, adding more oatmeal if necessary. Divide dough into twelve parts, knead and roll each bit of dough into a thin round cake. Lay cake on hot griddle and cook until edges begin to curl. Lift carefully and brown in a moderate oven until crisp. Time in oven, 30 minutes. Temperature, 350°.
