Potatoe Spoon Bread: Date Added: 9 Jun 2009

Ingredients

3/4 cup corn meal
2 teaspoons salt
1-1/2 cups water
2 eggs
3/4 cup milk
3/4 cup mashed potatoes
1 tablespoon shortening

Cooking Instructions

Mix the corn meal, salt and water, and boil five minutes. Beat eggs slightly, add milk, mashed potatoes, and shortening. Combine with mush mixture. Beat well and bake in a greased baking dish in a moderate oven. Serve from the same dish with a spoon. Time in oven, 40 minutes. Temperature, 325°.
