Cherry Cake: Date Added: 10 Aug 2009

Ingredients

1 cup shortening
Pinch salt
1-1/4 cups powdered sugar
5 eggs peel (mixed)
3 cups cake or pastry flour
1 teaspoon baking powder
1/4 cup orange, lemon, and citron
2 cups glace cherries
2 lemon rinds, grated

Cooking Instructions

Cream the shortening, add the sugar, and the eggs one by one, beating each in lightly. Sift together flour, baking powder, and salt. Chop fine the orange, lemon, and citron peel, and cut the cherries in halves. Stir flour lightly into the first mixture. Add the fruit and the grated lemon rinds. Mix all ingredients together. Bake in greased cake pans in a moderate oven.
Time in baking, 1-1/2 hours. Temperature, 325°. 2 loaves.
