Easter Bunny Cake: Date Added: 10 Aug 2009

Ingredients

4 eggs
1-1/2 cups sugar
2 cups cake or pastry flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup boiling water
1 teaspoon lemon extract

Cooking Instructions

Beat eggs until very light. Beat in sugar, a little at a time, and then the flour, sifted with salt and baking powder. Add boiling water, a small amount at a time, and the flavoring. Put into a large ungreased angel cake pan. Bake in a slow oven for about one hour, starting at 250° and increasing to 350°.

When cake is cold, frost as follows:
1-1/2 cups confectioners' sugar
2 tablespoons milk
1/2 teaspoon almond extract
2 teaspoons melted butter or margarine
Green coloring
Moisten sugar with milk until of consistency to spread. Add flavoring and spread on top and sides of cake, saving a small amount of icing. Add melted butter to this and color a delicate green. Use it to decorate the rim of the cake, allowing it to drip over the edge to resemble grass. Make bunnies with large, fresh marshmallows, pinching with thumb and finger at one end for nose and at the other for tail. Dip toothpick in melted chocolate and make dots for eyes. Large ears are cut from white writing paper. Arrange a row of these bunnies around edge of cake while frosting is still soft.
