2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
3 tablespoons shortening
1 egg
2/3 cup milk
Butter, sugar, cinnamon
Sift together the dry ingredients and work in the shortening. Beat egg, add milk and add to the first mixture. Spread in a shallow pan, cover with softened butter and sprinkle generously with sugar and cinnamon (one teaspoon cinnamon to one-half cup sugar). Bake in a moderately hot oven.
Time in baking, 25 minutes. Temperature, 375°. Fills pan 8 X 12 inches.
Dutch Apple Cake
Spread Quick Coffee Cake dough in a shallow pan. Brush over with melted butter and cover with thinly sliced apples, arranged in parallel rows. Sprinkle generously with sugar and cinnamon and bake like Quick Coffee Cake.
