Ingredients

5 thick slices bread
1 large onion
1 tablespoon butter
1/2 cup diced celery
6 boiled potatoes (cold)
1 teaspoon chopped parsley
2 pounds round steak

Cooking Instructions

Soak the bread and squeeze out the water. Add the onion which has been browned in the butter, the celery and potatoes cut into dice, and parsley. Mix thoroughly, season to taste, and if too dry, add a little milk. Spread the mixture over the steak, roll and tie. Sear the outside in a smoking hot pan, put in a roaster, add a little water and place in a moderate oven. Baste from time to time until tender. Place on a serving dish, thicken the gravy, and pour over the steak.
Time in oven, 1-1/2 hours. Temperature, 350°. Servings, 8
