1 tablespoon sugar
1 teaspoon mustard
1 tablespoon flour
1 teaspoon salt Speck cayenne
3/4 cup rich milk
2 egg yolks
1/4 cup vinegar
1 tablespoon gelatine
2 tablespoons cold water
2 cups flaked fish
1 tablespoon butter
Mix dry ingredients and add to milk, cook until thick. Beat egg yolks, add vinegar, and add to thickened mixture. Cook two minutes longer; then add the gelatine which has been soaked in the cold water and stir until well dissolved. Add fish, butter, and more salt if necessary. Pour into a greased mold and let stand until firm. Serve on crisp tender lettuce leaves with or without mayonnaise.
