1 cup shortening
1 cup sugar
1/2 pound almonds
2 eggs
1/2 orange
1/2 lemon
Cake or pastry flour
Cream shortening and add sugar gradually. Add nuts, blanched and ground fine, and the eggs well beaten. Add juice of the orange and lemon and the grated rind of either one. Add enough flour to make a dough stiff enough to roll. Chill dough and roll very thin. Cut with cooky cutter, brush over with white of egg and sprinkle with sugar. Bake in a moderately hot oven.
Time in baking, 5 minutes. Temperature, 375°. 5 dozen small cookies.
