2 cups water
1 cup sugar
1-1/2 cups mashed berries
1 tablespoon lemon juice
1 egg white
Boil water and sugar together five minutes. Cool and add berry pulp which has been rubbed through a coarse sieve. Add lemon juice. Pack in ice and salt and freeze to a mush. Add stiffly beaten egg white and finish freezing. If canned berries are used less sugar will be needed. Serves 8.
ORANGE SHERBET
Follow the recipe for Berry Sherbet, using strained orange juice in place of the berries. Add the grated rind of one-half orange for extra flavor.
PINEAPPLE SHERBET
Follow the recipe for Berry Sherbet, using crushed pineapple in place of the berries, and increasing the lemon juice to three tablespoons.
