4 egg whites
1 cup sugar
1/2 teaspoon vanilla
Mold of ice cream
Beat egg whites until stiff. Add gradually two-thirds cup sugar and continue beating until mixture will hold its shape.
Fold in one-third cup sugar and the vanilla. Grease baking sheets and sprinkle with flour. On the sheets mark four circles nine inches in diameter. Cover one circle with the above meringue mixture. On two circles make rings one and one-quarter inches wide of the meringue mixture. On the fourth circle make a lattice of the meringue mixture, using pastry bag and small rose tube. Bake in a slow oven until quite dry. Remove carefully and place the solid piece of meringue on a serving plate. Fasten on the two rings using marmalade or frosting. Put the round mold of ice cream in the centre. Put the lattice cover on top and serve at once.
Time in cooking, 1 hour. Temperature, 300 degrees. Recipe makes eight servings.
