Make vanilla ice cream by any preferred recipe and use to line a two-quart melon mold. Fill centre with Strawberry Mousse. Cover with ice cream, filling mold to overflowing. Cover, pack in ice and leave one hour. Then turn off the water that accumulates around the mold, repack and leave two hours or until needed. Turn out on a serving-dish, and surround with fresh cherries or strawberries (see recipe for Strawberry Mousse). Servings, 12
