1/2 cup pearl or 1/4 cup quick-cooking tapioca
2 cups boiling water
1/4 teaspoon salt
4 medium sized apples
1/2 cup sugar
1 tablespoon butter
If pearl tapioca is used soak over night or several hours in cold water and drain. Add tapioca to boiling water, add salt, and cook in a double boiler until clear. Pare and core apples. Cut in halves or quarters. Place in baking dish, sprinkle, with sugar, add cinnamon or nutmeg if desired, and dot with bits of butter. Cover with the cooked tapioca and bake in a moderate oven until the apples are tender. Serve hot with plain or whipped cream.
Fresh fruit such as peaches, cherries and rhubarb, canned fruit or soaked dried fruits may be used in place of the apples. Time in baking, 35 minutes. Temperature, 350°. Serves 6.
