2 cups stale bread crumbs
1/4 cup butter or margarine
3 cups sliced apples
1/3cup sugar
1/2 teaspoon cinnamon
2 tablespoons water
2 tablespoons lemon juice
Mix the crumbs with the melted butter. They should be coarse crumbs from stale bread rather than very dry, fine crumbs. Arrange alternate layers of sliced apples and buttered crumbs in a baking dish, sprinkling each layer with sugar and cinnamon. Have crumbs on top. Pour the water and lemon juice over, cover and bake in a moderate oven until the apples are tender, removing the cover for the last fifteen minutes to allow the top to brown. Serve with hard sauce, cream or maple syrup.
Brown sugar or half molasses and half white sugar may be used in the recipe.
Other fruits may be substituted for the apples. Fresh peaches, cherries and rhubarb, canned fruits of various kinds and cooked dried fruits are all good. Regulate the amount of sugar according to the tartness of the fruit. Time in baking, 50 minutes. Temperature, 350°. Serves 6.
