Cottage Pudding: Date Added: 22 Aug 2009

Ingredients

1/4 cup shortening
1/2 cup sugar
1 egg
1/2 cup milk
1-1/2 cups flour
2-1/2 teaspoons baking powder
1/4 teaspoon salt

Cooking Instructions

Cream shortening and add sugar. Add well beaten egg, then the milk alternately with the flour which has been sifted with the baking powder and salt. Bake in a shallow pan in a moderately hot oven. Serve hot with a liquid sauce or crushed fruit. Time in baking, 30 minutes. Temperature, 375°. Serves 8.

BLUEBERRY COTTAGE PUDDING
Add one cup blueberries, lightly floured, to the batter for Cottage Pudding.
