2 cups stale bread crumbs
(graham, whole wheat, or half graham and half corn bread)
1 quart milk
2 eggs
1/3 cup molasses
1/2 cup light brown sugar
1 teaspoon cinnamon
1/2 teaspoon ginger
1/8 teaspoon mace
Soak crumbs in half of the milk for an hour or two. Bring slowly to scalding point. Beat eggs and add first mixture to them, beating constantly. Add sugar, molasses, spices, and the rest of the milk. Bake in a slow oven until firm. Serve warm with plain or whipped cream or top with a generous spoonful of currant, quince, or apple jelly. Time in baking, 1-1/2 hours. Temperature, 300°. Serves 8.
