1 cup milk
1/4 cup shortening
1/2 teaspoon salt
1/2 cup sugar
1/2 teaspoon nutmeg
1 egg
1 yeast cake
1/4 cup lukewarm water
About 5 cups flour
Scald milk and pour over the shortening. Add salt, sugar and nutmeg. Cool until lukewarm, add beaten egg, and yeast, which has been softened in the warm water. Add enough flour to make a stiff dough. Knead thoroughly and let rise in a warm place until doubled in bulk. Knead again, roll to about three-quarters an inch in thickness and cut with a small round cutter. Place on a floured board, leaving enough space between the doughnuts so that they will not run together, and let rise until doubled in bulk. Fry in deep fat.
Time in cooking, 2-1/2 minutes each. Temperature, 360°. 3 dozen doughnuts.
