2 eggs 1 cup sugar
1 cup sour milk 4 to 5 cups flour
1/2 teaspoon salt
1/2 teaspoon soda
2 teaspoons baking powder
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1-1/2 tablespoons melted shortening
Beat the eggs until light and add sugar and sour milk. Sift salt, soda, baking powder, and spices with three cups of the flour and add to the first mixture. Add enough more flour to make a dough just stiff enough to handle. Add shortening. Roll dough to about a third of an inch in thickness, cut with a doughnut cutter and fry in deep fat.
Time in cooking, 3 minutes each. Temperature, 370°. 3 dozen doughnuts.
Sweet Milk Doughnuts
Follow the recipe for Sour Milk Doughnuts, using sweet milk in place of the sour, omitting the soda and increasing the baking powder to six teaspoons.
