Salt and pepper
3 tablespoons buttered crumbs
3 slices bacon
Scoop out centres of large ripe tomatoes. Break one egg carefully into each tomato, sprinkle with salt and pepper, cover with bread crumbs, and lay slice of bacon on each. Bake in a moderate oven. Turn bacon once during the cooking. Place under broiler for one minute to crisp and brown the bacon. Time in oven, 30 minutes. Temperature, 325°. Servings, 3
