8 fillets of halibut
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sugar
8 slices onion
8 teaspoons catsup
8 slices lemon
4 teaspoons butter
Cold water
Wash fillets and dry thoroughly. Place in a well-greased baking pan and sprinkle with the salt, pepper, and sugar. Divide the other seasonings equally among the fillets. Pour cold water into the pan to come half-way to the top of the fillets. Bake, basting frequently with the liquor in the pan, adding more hot water if needed. Do not let the water boil entirely out although most of it should evaporate. Remove fillets to a hot platter and pour remaining liquor in pan over them. Garnish with parsley. Any filleted white fish may be cooked in this way. Time in oven, 30 minutes. Temperature, 425°. Servings, 8
