Molded Salmon: Date Added: 13 Jun 2009

Ingredients

1 No. 1 can salmon
1 tablespoon gelatine
2 tablespoons cold water
3/4 cup milk
1 teaspoon salt
2 teaspoons sugar
1/2 tablespoon flour
1 teaspoon mustard
2 egg yolks
1-1/2 tablespoons melted butter
1/4 cup vinegar

Cooking Instructions

Remove salmon from can. Rinse well with warm water to remove oil, and separate into flakes. Soak gelatine in cold water. Make a boiled dressing, by heating milk in double boiler and adding salt, sugar, flour, mustard, and cayenne mixed. To these add egg yolks, slightly beaten, and melted butter. Pour over mixture a little of the scalded milk, then pour back into double boiler and cook until thick, stirring constantly. When thick add vinegar and soaked gelatine. Strain and add to salmon. When mixture begins to set, mold and chill. Serve with Cucumber Sauce (see recipe). Servings, 4
