Salmon Cutlets: Date Added: 13 Jun 2009

Ingredients

1 cup salmon
1-1/2 cups mashed potato
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon grated onion

Cooking Instructions

Flake salmon and add all other ingredients. Form into cut¬lets, roll first in crumbs, then in egg slightly beaten with one tablespoon of water added, then again in crumbs. Fry in deep fat and serve with Creamed Pea Sauce (see recipe). Time in cooking, 3 minutes each. Temperature of fat, 380°. Servings, 4
