3/4 pound smoked salmon
2 cups diced potatoes
1/2 cup sliced onion
2 cups peas
1 teaspoon butter
2 tablespoons flour
1/2 cup hot milk
Cut salmon in half-inch pieces. Cover bottom of casserole with onions and potatoes, add fish and peas, pour hot water over this and bake forty-five minutes in a moderate oven.
Make a white sauce of butter, flour, and milk, and add to casserole. Cook fifteen minutes longer, stirring if necessary. If too salty, pour boiling water over fish and rinse with cold water before using. Total time in oven, 1 hour. Temperature, 325°. Servings, 4
