1-1/2 cups flour
1-1/2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
6 tablespoons milk
1 egg
1/2 tablespoon cooking oil
1/2 cup grated pineapple (drained)
Mix and sift dry ingredients, add milk gradually, egg well beaten, shortening, and pineapple. Drop by spoonfuls into hot fat. Cook until well browned and drain on absorbent paper. Serve with syrup made by boiling one cup pineapple juice, two tablespoons lemon juice, and one-half cup sugar until thick. Time in cooking, 3 minutes each. Temperature of fat, 380°. Servings, 18
