Pinch salt
4 tablespoons sugar
Add salt to egg whites and beat until stiff. Add sugar gradually and continue beating until stiff enough to stand up in points when the beater is lifted from it. Spread over pie or pudding and bake in a moderate oven until delicately browned and firm. Too hot an oven browns meringue before it has cooked through so that it falls as it cools. Too little sugar is often the cause for a tough, shrunken meringue. Time in baking, 20 minutes. Temperature, 325°.
