Wash and core apples. Place in a baking dish and fill cavities with sugar, allowing one to two tablespoons sugar to each apple. Cover bottom of pan with water and bake in a hot oven (400°) until soft but not broken. A little cinnamon or nutmeg may be mixed with the sugar, or if the apples are lacking in flavor lemon juice is a desirable addition.
To vary plain baked apples, fill the centers, before baking, with dried fruit, crushed pineapple, marmalade, jam or jelly, or use maple syrup, honey or brown sugar for sweetening.
