2 cups flour
1-1/2 teaspoons soda
1/2 teaspoon salt
1 tablespoon sugar
1 egg
2 cups sour milk
1-1/2 tablespoons melted shortening
Mix and sift dry ingredients. Add well beaten egg mixed with the milk. Beat until free from lumps and add shortening. Pour sufficient batter on to a hot griddle to make a cake of the desired size (three to six inches in diameter). Cook until full of bubbles and browned on the under side, then turn to brown the uncooked side. Turn only once. If a thicker cake is liked add a little more flour to the batter.
Sweet milk can be used in this recipe but sour milk makes more tender cakes. With sweet milk use three teaspoons baking powder instead of the soda. Makes 2 dozen medium sized cakes.
Corn Meal Pancakes
Follow the recipe for plain pancakes, using one and one-half cups corn meal and one cup flour in place of the two cups of flour.
