Strawberry Ice Cream: Date Added: 14 Aug 2009

Ingredients

1-1/2 cups milk
1 egg
1 to 1-1/4 cups sugar
1 cup cream
1 quart strawberries

Cooking Instructions

Scald milk, add beaten egg and sugar and cook in a double boiler, stirring constantly, until thickened like custard. Cool and add cream, whipped. Pack in ice and salt and, freeze to a mush. Add berries which have been mashed and rubbed through a sieve and finish freezing. Instead of the fresh berries two cups pureed canned berries may be used. Less sugar will be required and a little lemon juice will improve the flavor. This recipe may be used for other fruit ice creams. Serves 12.
