2 cups milk
3/4 to 1 cup sugar
2 tablespoons flour
1/8 teaspoon salt
2 eggs
2 cups cream
1/2 tablespoon vanilla
Scald milk and add to sugar, flour and salt which have been mixed together. Cook in a double boiler for twenty minutes, stirring constantly until thickened, afterwards occasionally. Add slightly beaten eggs and cook a few minutes longer, stirring all the time. Cool, add cream whipped until stiff, and flavoring. Pack in ice and salt and freeze. Serves 10.
CHOCOLATE ICE CREAM
Add two squares chocolate and one-fourth cup sugar to the Vanilla Ice Cream recipe. Melt the chocolate, mix with a little of the sugar and add the scalded milk gradually, blending thoroughly after each addition so that the chocolate will not separate.
