1 cup milk
4 tablespoons flour
2 tablespoons butter
Crumbs
2 cups chopped, cooked macaroni
Salt and pepper
Egg
Make white sauce of milk, flour, and butter. Mix with macaroni and season. Form into croquettes about the size of an egg, dip in flour, egg, and crumbs. Fry in deep fat. Serve with Thin White Sauce (see recipe). Time in cooking, 3 minutes each. Temperature of fat, 380°. Servings, 8
