3 tablespoons butter
3 tablespoons flour
1-1/2 cups hot milk
1/8 teaspoon mustard
1/8 teaspoon paprika
3/4 teaspoon salt
A few grains white pepper
1/2 cup grated cheese
Melt butter, add flour and stir until smooth; then add milk, stirring briskly until free from lumps. Turn into double boiler and cook twenty minutes or more. Mix seasonings thoroughly, add to sauce with cheese and heat until cheese is melted and sauce perfectly smooth. Use egg beater if sauce is curdled or lumpy.
