3 tablespoons shortening
4 tablespoons sugar
2 eggs
1 cup milk
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
Cream shortening and add sugar. Add the yolks of the eggs, well beaten. Add milk, alternately with the flour, baking powder and salt which have been sifted together. Fold in the stiffly beaten whites of eggs. Pour into greased muffin pans and bake in a hot oven.
Time in baking, 20 minutes. Temperature, 400°. 16 small muffins.
