Plain Muffins with 6 Variations: Date Added: 2 Aug 2009

Ingredients

1 egg
1 cup milk
2 cups flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
2 tablespoons shortening

Cooking Instructions

Plain Muffins with 6 Variations
Beat eggs until light and add milk. Mix and sift dry ingredients together and add to the first mixture. Beat just enough to blend thoroughly. Add melted shortening. Turn into greased muffin pans and bake in a hot oven. Time in baking, 25 minutes. Temperature, 400°. 12 muffins.

Corn Muffins
Follow the recipe for Plain Muffins, using one cup corn meal and one cup flour.

Date Muffins
Add to the recipe for Plain Muffins, one tablespoon sugar and one cup dates cut in small pieces.

Graham or Whole Wheat Muffins
Follow the recipe for Plain Muffins, using one cup graham or whole wheat flour and one cup white flour.

Rye Muffins
Follow the recipe for Plain Muffins, using one cup rye flour and one cup white flour.

Sour Milk Muffins
Substitute sour milk for sweet in the Plain Muffins recipe and use one-half teaspoon soda and one teaspoon baking powder in place of the three teaspoons baking powder.

Cheese Muffins
Add one-half cup grated cheese to the recipe for Plain Muffins.
