Potatoe Corn Meal Muffins: Date Added: 2 Aug 2009

Ingredients

2 tablespoons shortening
1 tablespoon sugar
1 egg
1 cup milk
1 cup hot mashed potato
1 cup corn meal
4 teaspoons baking powder
1 teaspoon salt

Cooking Instructions

Cream shortening, add sugar, egg well beaten, milk, potato and corn meal with which baking powder and salt have been mixed. Bake in greased muffin pans in a moderately hot oven/ Serve immediately. Time in baking, 25 minutes. Temperature, 400°. 10 muffins.
