4 tablespoons shortening
2 tablespoons sugar
1 egg
1 cup mashed potato
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
Cream the shortening and sugar, add the egg well beaten and then the potato. Mix thoroughly. Sift flour, baking-powder and salt and add alternately with milk to first mixture. Bake in muffin tins in a moderately hot oven. Time in oven, 25-30 minutes. Temperature, 375°. Servings, 10
