1 cup boiled rice
1 cup milk
2 eggs
5 tablespoons melted shortening
1/2 teaspoon salt
2 teaspoons sugar
3 teaspoons baking powder
1-1/2 cups flour
Mix rice, milk, beaten eggs, shortening, and beat well. Put salt, sugar, and baking powder into flour and sift into batter. Bake in greased muffin pans in a hot oven. Time in baking, 25 minutes. Temperature, 400°. Makes 24 small muffins.
