Line a pie plate with pastry. Fill with apples which have been pared, cored, and cut in thin slices. Add about a cup of sugar (the exact amount will be governed by the tartness and flavor of the apples) with which a tablespoon of flour has been mixed. Sprinkle with cinnamon or nutmeg. Cover with a top crust and bake in a hot oven until the apples are soft and the pastry done. If the apples are lacking in flavor a little lemon juice is a good addition.
Time in baking, 45 minutes. Temperature, 400°.
