Fine, dry bread crumbs
1 medium sized onion
2 tablespoons lard
Salt, pepper
1/2 lemon
Use lean chops, cut rather thick. Roll in crumbs. Slice onion and cook in lard, or pork drippings until slightly brown. Arrange chops in the pan, sprinkle with salt, pepper, and lemon juice. Brown one side, turn, and add water almost to cover, and cook in a moderate oven until tender, removing the cover for the last fifteen minutes. Time in oven, 30 minutes. Temperature, 350°. Servings, 6
