4 cups hot mashed potato
1 teaspoon salt
1/4 teaspoon paprika
4 tablespoons milk
2 eggs
2 tablespoons butter
Cook, drain, dry, and mash potatoes, then add seasonings, milk, and butter. Add well beaten yolks of eggs and beat well. Then add whites of eggs which have been beaten stiff. Turn into a buttered dish and bake in a hot oven until brown. If cold potatoes are used, heat in double boiler before using. Have hot when put into oven. Time in oven, 15 minutes. Temperature, 400°. Servings, 6
