Potatoes à L'italienne: Date Added: 14 Jun 2009

Ingredients

2 cups mashed potato
1/2 cup cream
2 tablespoons butter ham
1/2 teaspoon salt 1 egg yolk (beaten)
1 tablespoon onion juice
1 tablespoon chopped parsley
1/2 cup finely chopped cooked
3 egg whites, beaten stiff
1 tablespoon grated cheese

Cooking Instructions

Combine all ingredients but cheese. Beat until fluffy. Heap lightly on buttered baking dish leaving top rough. Sprinkle with cheese. Brown delicately in moderately hot oven. Time in oven, 15 minutes. Temperature, 375°. Servings, 8
