1-1/2 cups stale bread crumbs
3 cups milk
1/3 cup sugar
2 eggs
Pinch salt
Flavoring
Soak the bread crumbs in the milk, which has been scalded, until soft. Add sugar, slightly beaten eggs, salt and flavoring which may be any desired extract or spice. Bake in a moderate oven until firm.
One egg may be omitted, using in its place an extra quarter cup of bread crumbs.
Raisins may be added to the pudding, or it may be spread with jelly when almost done, topped with meringue and put back in the oven to finish cooking and brown the meringue. Time in baking, 45 minutes. Temperature, 325°. Serves 6.
CHOCOLATE BREAD PUDDING
Add one and one-half squares chocolate to the Bread Pudding recipe and increase the sugar to one-half cup. Melt the chocolate, mix with the sugar and gradually add the bread and milk mixture to it, blending carefully until smooth.
