1 cup cocoanut 3 cups milk
1-1/2 cups crumbs
1/2 cup sugar
2 tablespoons lemon juice
2 teaspoons grated lemon rind
2 eggs
2 oranges
1/4 cup sugar
Soak cocoanut in milk at least an hour, add crumbs and sugar and cook in double boiler fifteen minutes. Add lemon juice and rind to beaten egg yolks and add to the mixture. Pour into a buttered baking dish and place cut-up oranges, sprinkled with sugar, on top. Cover with the stiffly beaten egg whites sweetened with four tablespoons sugar, and brown in a moderate oven. Serve either hot or cold.
Time in oven, 30 minutes. Temperature, 325°. Servings, 6
