Indian Pudding: Date Added: 22 Aug 2009

Ingredients

1/3 cup corn meal
1/2 cup cold water
1 quart scalded milk
1/2 cup molasses
1/4 cup sugar
2 teaspoons ginger
1 teaspoon salt
1 cup cold milk

Cooking Instructions

Add corn meal, mixed with cold water, to scalded milk and cook twenty minutes in a double boiler, stirring occasionally. Add molasses, sugar, ginger and salt and pour into a buttered baking dish. Bake one-half hour in a moderate oven, add cold milk and bake slowly without stirring. Serve with cream or hard sauce.
Time in baking, 4 hours. Temperature, 300°. Serves 8.
