Prune Soufflé: Date Added: 22 Aug 2009

Ingredients


1 cup cooked prune pulp
1/4 cup prune juice
2 tablespoons sugar
2 egg whites
1/2 cup bread or cracker crumbs
1/2 cup nut meats (chopped)
1 teaspoon vanilla

Cooking Instructions

Mix pulp, juice, and crumbs. Stir well. Add sugar and vanilla. Stir again, add nuts. Beat egg whites and fold into mixture. Pour into buttered dish. Set dish in pan of hot water. Bake in a moderate oven until firm. Serve with whipped cream.
Pulp of other cooked fruits may be substituted for the prunes. Time in baking, 45 minutes. Temperature, 325°. Serves 6.
