4 tablespoons rice
1 quart milk
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon or nutmeg
Wash rice and mix with the other ingredients. Pour into a baking dish and bake slowly until thick and creamy, stirring occasionally during the first hour. Serve with cream. A cup of raisins maybe added.
Time in baking, 3 hours. Temperature, 300°. Serves 8.
