1 yeast cake
1/2 lukewarm water
2/3 cup shortening
2/3 cup sugar
1 teaspoon salt
1 cup mashed potato
1 cup milk
2 eggs
Flour
Soften yeast in lukewarm water. Add shortening, sugar, salt and potato to the milk which has been scalded. When cooled to lukewarm add the yeast. Mix thoroughly, add well beaten eggs and stir in enough flour to make a very stiff dough. Turn out on to a floured board and knead well. Put into a large bowl to allow for slight rising, cover with a cloth and set in the refrigerator. When wanted, cut off as much dough as is needed, shape into rolls, let rise until doubled in bulk and bake in a hot oven.
Time in baking, 20 minutes. Temperature, 425°. 3 dozen small rolls.
