3 cups water
2 cups sugar
1/2 cup chopped preserved ginger
2 tablespoons ginger syrup
1/2 cup lemon juice
2 egg whites
Bring water and sugar to the boiling point and add chopped ginger and syrup. Cool, add lemon juice and stiffly beaten egg whites. Put into freezer, pack in ice and salt and freeze. Serves 8.
