Coffee-Raisin Cupcakes: Date Added: 10 Aug 2009

Ingredients

1/2 cup shortening
1-1/2 cups sugar
3 eggs
3 cups cake or pastry flour
4 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon salt
3/4 cup strong coffee
1 cup seeded raisins

Cooking Instructions

Cream shortening and add sugar. Add the eggs well beaten. Sift flour with baking powder, spices and salt and add alternately with the coffee. Stir in the raisins, cut in halves and lightly floured. Bake in well greased gem pans in a moderate oven.
Time in baking, 30 minutes. Temperature, 350°. 2 dozen small cakes.
