Spinach Croquettes: Date Added: 14 Jun 2009

Ingredients

1 cup chopped spinach
1 cup chopped boiled ham
1 tablespoon prepared mustard
1/2 cup bailed rice
Rice water

Cooking Instructions

Mix the spinach, ham, mustard, and rice and moisten with enough rice water to shape into croquettes. Dip croquettes in egg, roll in crumbs, and fry in deep fat until brown. Serve with Tomato Sauce (see recipe). Time in cooking, 3 minutes each. Temperature of fat, 380°. Servings, 6
