Corn Meal Waffles: Date Added: 2 Aug 2009

Ingredients

1/2 cup corn meal
2 cups water
2 tablespoons sugar
1 teaspoon salt
1 cup milk
4 tablespoons shortening
3 eggs
3 teaspoons baking powder
1-1/2 cups flour

Cooking Instructions

Have water boiling vigorously, sprinkle in corn meal slowly, stirring constantly, and cook until thickened. Add sugar, salt, milk and shortening. Cool, add egg yolks well beaten and the flour mixed and sifted with the baking powder. Beat well and fold in the stiffly beaten egg whites. Cook in a hot waffle iron. Makes 6 large waffles.
